How To Please Your Mother with Pancakes

Mother's Day is coming up so soon! Some of us like to gift our beloved mother with flowers, jewelry, or other pretty things. Some like to take her out to a Mother's Day brunch.

Here we're sharing our favorite pancake recipe so you can show your mom how much you care.

Mom's Best Fluffy Pancakes

Yields 12 silver dollar pancakes

Dry ingredients

200g All purpose flour
20g Malted milk powder (optional)
12g Baking powder
6g Salt

Wet ingredients

240g Buttermilk
2 Eggs, separated
60g Butter, melted
30g Sugar

Miscellaneous

Fruits of your choice
(We used 1 cup of blueberries and 1 sliced banana)
Butter
Maple syrup

Let's make pancakes

Sift together the dry ingredients together into a large bowl – flour, malted milk powder, baking powder, and salt.

Don't fret if you can't find malted milk powder; the optional ingredient is mainly for better browning of the pancakes.

Next, mix the buttermilk, melted butter, sugar, and egg yolks together. In a separate bowl, whisk the egg whites until soft peaks form.

Combine the dry into the wet ingredients. Mix together until just incorporated. Don't over-mix the batter to keep the pancakes from getting tough!

Gently fold the egg whites into the mixture. Remember we're here to make airy, fluffy pancakes, not rubbery ones.

Heat a non-stick flat skillet on medium heat. Once the pan is hot enough, add some pancake batter onto the dry pan. No oil is needed; you'll have beautiful golden-brown and flat pancakes from the dry pan!

Once bubbles are forming in the batter, it's time to gently flip it to the other side.

These pancakes are a little larger than silver dollar pancakes, and takes about 3 minutes for each side to turn golden brown. Of course, this depends on your pan and the amount of heat you have on.

Now, place your pretty pancakes on a plate, and serve! We add a pad of butter on the warm pancakes, then top ours with banana slices, fresh blueberries, and maple syrup. Adding the fruit makes us feel less guilty about the buttery indulgence!

We like piling the pancakes high in one stack. We love cutting into them all at once!

To make this an even more special experience for mom, you can also decorate your table with seasonal flowers, candles, and other little props.
